5 WGR waffles (1 oz eq. each)

  • 2/3 cup low-fat cream cheese, softened

  • 1 tsp vanilla extract

  • 5 cups your choice of fruits (kiwi, strawberries, blueberries, raspberries, banana, pineapple, etc.)

  • 2 tbsp maple syrup (optional)

Whole Grain Caterpillar Pancakes

1 cup 100% whole wheat pancake mix

  • 1 cup unflavored milk

  • 1 large egg

  • 2 cups strawberries, chopped

  • 2 cups blueberries, halved

  • 1/2 bell pepper, sliced

Broccoli Chicken Quesadilla

1/2 lb (1 1/2 cups) shredded cooked chicken

  • 1 tsp taco seasoning

  • 6 whole-wheat tortillas (6 inches)

  • 1/4 cup butter, melted

  • 1 cup shredded Mexican blend cheese

  • 1/2 cup finely chopped cooked broccoli
